MIYABI - 5000FCD SUJIHIKI
The Miyabi blade series, famous throughout the world for their extremely high quality and craftsmanship inspired by the Japanese classic. The blade of all knives is constructed with 49 layers of Damascus Steel and sharpened by hand. This process gives it an unparalleled sharpness. The handle is made of pakkawood, a very resistant material and particularly suitable for use in the kitchen. To embellish it we find a finely crafted mosaic pin, which gives these knives an extra touch of style and elegance.
CRYODUR® is the heat treatment specifically used in the manufacturing process of this knife (cooling in liquid nitrogen to -196°C) to achieve an extreme hardness of the edge, rated 61 HRC on the Rockwell scale.
